Welcome Wayne

The Maclean Lower-Clarence Services Club Board of Directors and
Management would like to take this opportunity to officially
welcome Wayne Rush as the new Head Chef of the Rocky Mouth
Bistro.
Wayne started his career as a baker, and developed a passion for
the challenges of the food industry. His culinary interests
broadened, and he left the bakery for the kitchen. Wayne completed
his chef apprenticeship at the award-winning Fire + Ice restaurant
in Toowoomba. He was recognised a number of times during his
apprenticeship, winning 7 awards in 2004, including the Darling
Downs Signature Dish competition.
After completing his apprenticeship, Wayne worked at the Hilton
Hotel in Brisbane under Head Chef Rick Stephens. During his time
there was fortunate enough to work with other top Australian chefs,
including Shannon Bennet, Cheong Liew and Donna Hay.
Seeking adventure, Wayne and his partner Karla moved to the Ayers
Rock Resort in the Northern Territory. During his time there Wayne
worked in a number of different restaurants. From the 4 star
Arnguli Grill, to the 6 star Longitude 131, and even cooking steaks
on the back of a truck under starlight, his experience in the NT
expanded Wayne's repertoire and developed his versatility in the
kitchen.
Wayne left the sands of the desert for the Clarence Valley in 2006.
His first position was as Head Chef of the Aussie Steakhouse in
South Grafton, after which he worked in a number of other
restaurants and cafes in the Clarence Valley, always bringing with
him a commitment to high quality food and a passion for local
produce.
Wayne lives in Lawrence with his partner and their two daughters.
He began working here at the Maclean Lower Clarence Services Club
at the end of 2010 and is a vital and valued member of our
hospitality team. Wayne shares our vision of providing exceptional,
affordable meals made from fresh Clarence Valley produce, and he
and his team look forward to seeing you soon.
